  • 130克蛋清
  • 40克糖
  • 1/2ts 香草精
  • 104g 杏仁粉
  • 70克糖粉
  • 低筋面粉 16g
  • 8克可可粉
  • 150克奶油芝士
  • 35克糖
  • 60克原味酸奶
  • 1/4ts 香草精
  • 4克叶明胶
  • 120克鲜奶油
  • 咖啡糖浆(20ml水+5g糖+10g espresso)
  • 淡奶油(装饰)
  • 可可粉

说明书

  1. 在碗中搅打蛋清,当气泡上升时,将糖分成两份并搅打成蛋白酥皮。
  2. 过筛杏仁粉、糖粉、可可粉和低筋面粉并混合。
  3. 将面团放入糕点袋中,一次取出一排,形成长方形。撒两次糖粉,放入预热到180度的烤箱烤9分钟。
  4. 平底锅呈圆形,再烤 2 张。
  5. 将长方形饼干纵向切成两半,并修剪掉边缘。
  6. 准备圆形饼干,将它们浸入 10 厘米的模具中。
  7. 将慕斯圈放入12cm的慕斯框内,边缘放1个长方形饼干,地上放1个圆形饼干。
  8. 将奶油芝士放入碗中轻轻松开,然后加入糖、原味酸奶和香草精,混合,加入融化的吉利丁并混合。
  9. 加入鲜奶油并混合。
