我用砂纸打磨香喷喷的绿茶牛奶果酱做了一个绿茶蛋糕!我在O’sulloc看到它卖了很长时间,觉得它很漂亮,所以我现在做了。

因为是自制的牛奶果酱,绿茶味真的很不错,甜甜的,太好吃了~

做果酱需要很长时间,但我觉得做很多,和面包或拿铁等各种食物一起吃会很好~^^

由于蛋糕上夹着牛奶果酱,所以需要在薄片上撒上足够的糖浆使其湿润。当我倒上绿茶釉并涂上它时,它闪闪发光,似乎增添了一种高级感*^^*

从绿茶片到绿茶奶酱再到绿茶釉,都是满满抹香的绿茶蛋糕~

配料

绿茶牛奶果酱

  • 15克绿茶粉
  • 120克糖
  • 70克炼乳
  • 250毫升淡奶油
  • 500毫升牛奶

绿茶海绵蛋糕片

  • 5 蛋清
  • 100克糖
  • 5 蛋黄
  • 2克香草精
  • 130克低筋面粉
  • 10克绿茶粉
  • 4克泡打粉
  • 60克牛奶
  • 50克融化的黄油

绿茶釉

  • 35克水
  • 150克淡奶油
  • 20克糖
  • 100克白巧克力
  • 5克绿茶粉
  • 4克叶明胶
  • 绿色食用色素
  • 糖浆

说明书

绿茶牛奶果酱

  1. 将绿茶粉和100克鲜奶油放入锅中混合。
  2. 加入150g剩余的鲜奶油拌匀,再加入糖和炼乳拌匀。
  3. 加入牛奶,混合,边搅拌边用中火煮沸。
  4. 边搅拌边煮沸 40-50 分钟,直至变稠,放入瓶中,冷却,然后存放在冰箱中。

绿茶海绵蛋糕片

  1. 如果打蛋清时出现大气泡,将糖分2-3次打发成蛋白霜。
  2. 将蛋黄分成两份并混合,然后加入香草精并混合。
  3. 将低筋面粉、绿茶粉和泡打粉分成两份混合。
  4. 在融化的黄油和牛奶中加入少许面团并混合,然后加入主面团并混合。
  5. 倒入烤盘中,敲击底部 2-3 次以去除气泡。
  6. 在预热至 180 度的烤箱中烘烤 35-40 分钟,然后冷却。
  7. 把蛋糕片切成4片,一张放在旋转盘上,撒上糖浆,抹上牛奶果酱,再放一张在上面。再重复 2 次。
  8. 在蛋糕的顶部和侧面抹上一层薄薄的牛奶果酱,压扁,放入冰箱冷藏。

绿茶釉

  1. 将水、淡奶油和糖放入锅中加热。当它沸腾时,把它从火上拿下来。
  2. 加入白巧克力并混合,然后加入绿茶粉并混合。
  3. 加入用冷水浸泡15分钟的吉利丁,混合,加入少许绿色食用色素,混合,过筛。
  4. 上釉温度调到30度,全部浇在蛋糕上,略微凝固,再浇一次上釉。
