巧克力海绵蛋糕片

  • 4 蛋清
  • 100克糖
  • 4 蛋黄
  • 40克融化的黄油
  • 45克牛奶
  • 1/2ts 香草精
  • 95克低筋面粉
  • 15克可可粉
  • 1/2 吨泡打粉

伽纳彻

  • 300克巧克力
  • 150克热鲜奶油
  • 30克玉米糖浆
  • 150克鲜奶油
  • 糖浆
  • 装饰巧克力

说明书

蛋糕片:

  1. 将蛋清在碗中打发,待出现大气泡时,将糖分2-3次打发成蛋白霜。
  2. 将蛋黄放入另一个碗中并打散,然后加入融化的黄油、牛奶和香草精并混合。
  3. 加入1/3的蛋白酥皮并混合。
  4. 将低筋面粉、可可粉和泡打粉过筛并混合,然后加入所有剩余的蛋白霜并混合。
  5. 倒入烤盘,去除气泡,放入预热至170度的烤箱烤40至45分钟。

伽纳彻

  1. 将巧克力和热奶油放入碗中搅拌至巧克力完全融化,然后加入淀粉糖浆并混合。
  2. 将一半的甘那许转移到另一个碗中,让它冷却。
  3. 将冷却的甘那许加入生奶油中并混合。
  4. 将切好的蛋糕片放在旋转盘上,撒上糖浆,抹平巧克力奶油。
  5. 再重复一次。
  6. 放上最后一张蛋糕片,撒上糖浆。
  7. 将顶部和侧面的奶油抹平,并在冰箱中硬化 1 小时。
  8. 将剩余的甘那许倒在蛋糕上以覆盖它。
  9. 在上面撒上装饰巧克力。
