港式蛋挞烹饪树的菜单上,我们将教你如何从头开始制作这道美味的食谱!

我在脆皮蛋挞纸上做了一个港式蛋挞,里面充满了湿润的馅料。

据说正宗的港式蛋挞用的是不加糖的炼乳,但是很难买到,所以就用牛奶做了。

我先烤了带底的蛋挞纸,然后填上馅料再烤,所以我想我可以做一个更脆的蛋挞,烤出来的颜色也很好吃。

从烤箱里拿出来的时候,中间部分要微微皱起,这样才能恰到好处地感受到柔软湿润的感觉。

葡式蛋挞的口感是酥脆的,而港式蛋挞是曲奇的口感,所以我觉得是比较清淡的蛋挞,比较好吃。

配料

  • 80克无盐黄油
  • 30克糖
  • 1克盐
  • 1个蛋黄
  • 10克牛奶
  • 140克低筋面粉
  • 20克玉米淀粉
  • 110克鸡蛋
  • 2克香草豆瓣酱
  • 40克糖
  • 110克水
  • 80克牛奶

说明书

  1. 黄油室温融化,加入糖和盐,打发至发亮,然后加入蛋黄搅拌。
  2. 加入牛奶拌匀,加入软面粉和玉米淀粉,用手拌匀,揉成团,包上保鲜膜,放入冰箱静置30分钟左右。
  3. 鸡蛋加入糖和香草豆沙,拌匀,加入牛奶和水,混合,过筛,盖上盖子,放入冰箱冷藏。
  4. 从冰箱中取出挞皮,分成8等份(每份约35g),放入模具中,用手压紧,用刀削去边角。
  5. 上面放一张羊皮纸杯,放一块压石,放入烤箱180度烤15分钟,取出压石,倒入90%的馅料。
  6. 放入烤箱180度烤20-25分钟,中间部分稍微变脆时,从烤箱中取出,冷却10分钟左右。
  7. 小心地将其从框架中取出。(如果不容易脱落,用刀轻轻提起边缘,用手包好)
